Green coffee is coffee that is not roasted. Green mountain coffee is the one that is grown in the mountainous regions of the world. Arabica type of coffee grown in the mountains is preferred for roasting coffee. This is because it is grown much higher (about 3000 feet and over above sea level) hence is believed to have less caffeine content in it compared to Robusta coffee. The quality of Arabica is also higher and this is attributed to the fact that it takes longer to mature in the high altitudes which makes its beans harder. They are also better flavored compared to the Robusta, although there are inferior types of Arabica which make the higher quality Robusta better.
The Jamaican Blue Mountains is an example of mountain region that produces high quality green mountain coffee. There are other mountainous areas in the world that produce high quality coffee. Good green mountain coffee should be handpicked and processed. This means that planting, transplanting, cultivating, fertilizing and transporting should be done by hand or human labor and the seeds spread out in the sun for drying. Green coffee grown in the mountains is also shade-grown. Examples of trees used to provide shade are the gravilea, cedro, macadamia, banana, papaya and cushin among others.

The fact that green mountain coffee is organically grown makes it cheap to produce and what comes out is a superior quality brand. Green mountain coffee is however pricier so is its by-products. Most mountain growers do not use chemical insecticides, fertilizer or herbicides to treat their coffee plants. The fields in which this coffee is grown retain their fertility for a long time as a result. Due to the fact that the coffee fruits, hulls and by products are returned to the field to serve as compost, green mountain coffee is considered friendly to the environment.
