Green coffee is coffee that is not roasted. Green mountain coffee is the one that is grown in the mountainous regions of the world. Arabica type of coffee grown in the mountains is preferred for roasting coffee. This is because it is grown much higher (about 3000 feet and over above sea level) hence is believed to have less caffeine content in it compared to Robusta coffee. The quality of Arabica is also higher and this is attributed to the fact that it takes longer to mature in the high altitudes which makes its beans harder. They are also better flavored compared to the Robusta, although there are inferior types of Arabica which make the higher quality Robusta better.
