Green Coffee

Green coffee beans are essentially unroasted beans. Generally, in a raw form, all coffee beans are green until they are roasted. These beans are actually the seeds of the coffee berry and in order to get them, the flesh of the coffee berry is taken out, usually with the use of a machine. The berries have to be carefully sorted out according to their color and degree of ripeness and the flesh of the coffee berry removed, leaving the seeds, which in essence are normally referred to as the coffee beans. The coffee beans are then fermented to remove the slimy mucilage left coating the beans. The beans are then soaked and washed in lots of fresh water to further remove the residue left over from the fermentation process.

Green coffee is coffee that is not roasted. Green mountain coffee is the one that is grown in the mountainous regions of the world. Arabica type of coffee grown in the mountains is preferred for roasting coffee. This is because it is grown much higher (about 3000 feet and over above sea level) hence is believed to have less caffeine content in it compared to Robusta coffee. The quality of Arabica is also higher and this is attributed to the fact that it takes longer to mature in the high altitudes which makes its beans harder. They are also better flavored compared to the Robusta, although there are inferior types of Arabica which make the higher quality Robusta better.

If you are a true coffee fan, then there are a number of things you should know about the processing and storage of coffee. First of all, storing fresh coffee in the freezer is not the way you would want to go. The moisture and oxygen in there will certainly prove detrimental to the coffee beans. Light and heat will also adversely affect the coffee that you want to remain fresh.

When you take the coffee beans out of the freezer, condensation will form on them, and the excess moisture will make your prized fresh beans to go stale in a very short time. While in the freezer, the beans will also tend to take up, by absorption, the smell of the foods that are placed close to them.
